The neon pig is lit and Bigg’s BBQ is open for business at 719 Massachusetts in Lawrence. Bigg’s has opened in the former Buffalo Bob’s Smokehouse space, which had been on Mass since 1977. [The Dynamite Saloon, the adjacent bar attached to Buffalo Bob’s, is now the Ladybird Diner (721 Mass).]
Bigg’s, owned by Doug Holliday, smokes on hickory wood and uses a dry rub blend with only a bit of sauce (by Kansas City standards). And that’s not the only break with local tradition. Your meal could start with a barbequed egg roll (pulled pork, cream cheese and chopped cabbage) or a warm twice-baked potato salad. With both St. Louis style and baby back ribs, you’ll see plenty of rib bones on plates throughout the dining room. The house signature sandwich is pulled pork or chopped beef (a combo is both) topped with queso and fried onion strings. And you can have chocolate covered bacon for dessert.
The original Bigg’s is located at 2429 Iowa Street. There’s also a sister restaurant, Burgers By Bigg’s (4821 W 6th Street, Lawrence), where they’ve been known to slap a cheeseburger patty inside of a grilled buttered donut, in addition to some classic truck stop fare (chili cheese dogs, pork tenderloins and house cut fries).[Images via Facebook: Bigg’s]
