The whiskey is a go. Julep (4141 Pennsylvania, Suite 104), the whiskey-central cocktail club from husband and wife team Beau Williams and Keely Edgington, opens Friday in Westport at 5 p.m. The Pitch broke the news this afternoon.
Back in January, The Recommended Daily talked to Williams and Edgington about their plans for the whiskey bar, which will have whiskey lockers, tastings and at least three kinds of ice. The bar gets its name from the mint julep — the four-ingredient cocktail (water, sugar mint and whiskey) indelibly associated with the Kentucky Derby.
“You want something that’s soft and aromatic and pretty,” Edgington says. “It’s almost like a boozy sweet tea.”
Julep’s version will have house mint syrup made with a cold steep to avoid overextraction. The new cocktail club has its foundation in Hawthorne & Julep — the cocktail catering service run by the duo since November 2012. Williams, the former head bartender at Manifesto (which celebrated its fifth anniversary last week with the introduction of a new cocktail menu), will once again be back behind a bar. He’s been influencing the cocktail culture of Westport for years, having helped to design the original drink menu at the Westport Cafe & Bar (419 Westport Road).
“We don’t to reinvent Westport. We just want to add another layer to the textured fabric that is this neighborhood,” Williams says.
Julep will be open from 5 p.m. to 1:30 a.m. Monday through Saturday and the kitchen will serve food until midnight. The bar’s entrance is on Archibald Street.[Image via Facebook: Julep]
