Potbelly is slinging subs in Overland Park

Potbelly is expanding its local presence with a new sandwich shop slated to open at 6751 College Boulevard in Overland Park. The Chicago-based sandwich chain, which went public last month, is in the midst of a huge expansion. The first area shop opened on the Plaza this June at 4725 Broadway.

The quirky shop often features live performances — general manager Austin Short has a guitar and he’s not afraid to use it — and toasted subs. The best known sandwich is “The Wreck,” a combination of salami, roast beef, ham, turkey and Swiss cheese. If you’re stopping in, grab a milkshake. They have the pleasant clumpiness and flavor that usually isn’t found outside of an aging hamburger stand or soda fountain. The Potbelly in Overland Park will be open Monday through Saturday from 11 a.m. to 9 p.m. and Sunday from 11 a.m. to 7 p.m.
