Bread & Butter Concepts wants you to share and share alike with their latest concept: Republica (4807 Jefferson Street). The folks behind BRGR, Taco Republic, Urban Table, and Gram & Dun, will open their Spanish-themed eatery on the Plaza Tuesday.
The newest spot from the local restaurant group is a modern take on Spanish tapas with Gram & Dun’s executive chef Bradley Gilmore (formerly of Urban Table) heading up the kitchen. The tapas, cold and hot, range from deviled eggs with white anchovy and guindilla peppers (huevos diablos) to albondigas (pork meatballs with Green Dirt Farm sheep’s cheese, pepperonata, radish and celery leaves).
This is a restaurant where dishes are meant to be shared. They’ll offer a pair of paella specials that require a minimum of two diners to be ordered. Republica will also feature Spanish ham, including lomo, serrano and Iberico pork shoulder (for those willing to splurge) and sheep, goat and cow cheese. [See the full dinner menu here]
The show is part of dinner at the new Plaza spot. They’ll serve that paella tableside, as well as encourage you to cook your own Wagyu beef on a hot rock. They’ve got seven takes on a gin and tonic (called Gin Tonics) poured at your table, three iterations of Sangria by the glass or pitcher, as well as a dedicated sherry list meant to reflect the Spanish influence on the menu. It’s been a busy year for Bread & Butter Concepts. It purchased three Ingredient restaurants (in Kansas City and Columbia, Missouri, and Leawood, Kansas,) earlier this year, which were remodeled and rebranded as Ingredient True Eatery. The restaurant group also plans to open G. Berto Cucina — featuring Italian fare — in 2016.
