Update: The Summit Grill & Bar will not be opening Wednesday. They’re awaiting final inspection, but hope to be open later this week. We’ll update this post accordingly. The Summit Grill opened Monday, October 27.
The Summit Grill & Bar (500 West 75th Street) opens
Wednesday at 3 p.m. in Waldo. The menu in the new spot resides somewhere between modern American and classic comfort fare. It’s chops and burgers (the Farm House is topped with truffle aioli, smoked bacon, sharp cheddar and a fried egg) and pot roast and seafood (Mahi Mahi tacos).
This is the second location for the Summit Grill concept. Owners Andy Lock and Domhnall Molloy opened the original location in Lee’s Summit (4835 Northeast Lakewood Way) in 2012. Lock, the general manager, and Molloy, the chef, were both formerly with McCormick & Schmick’s. The Lee’s Summit location is known for having solid happy hour specials (daily from 3 to 6 p.m.) and chicken fried chicken.
The Waldo restaurant is located in the space that held Remedy Food + Drink (which closed in September) for the past two years and Kennedy’s before that. They’ll have that daily happy hour from 3 to 6 p.m. and will serve brunch from 10 a.m. to 3 p.m. on Saturday and Sunday.
