The Big Biscuit is coming to Lawrence

big-biscuit-020614The Big Biscuit is getting bigger. The local chain, which opened its first location in 2000, will arrive this spring in Lawrence’s Westgate Shopping Center at the Southeast corner of 6th and Wakarusa.

This will be the sixth location for the breakfast spot, which is in Prairie Village (5400 W. 95th Street) and Shawnee (12276 Shawnee Mission Parkway) on the Kansas side; and Independence (16506 E. Highway 40), Blue Springs (530 N. 7 Highway) and Kansas City (6332 NW Barry Road) on the Missouri side.

The breakfast is Midwest country with biscuits and gravy, eggs in every fashion and pancakes that are plate-sized. The cinnamon rolls come in pancake form or as sticky biscuits — an iced biscuit that can be “loaded” with raisins, cranberries and pecans. One rolls out of The Big Biscuit, so much as one walks.

Construction has begun on the new restaurant, which is expected to open in March or April.
